Yellow Rice


2 cups of rice, rinsed
2 cups of water
2 packets of sazon, con azafran
1 1/2 teaspoon of salt
1/8 teaspoon of pepper
1 teaspoon oregano
2 bay leaves
5 tablespoons of oil
2 tablespoons of sofrito
1/2 cup of corn (optional)


1 Heat oil in pot and add sofrito until fragrant.
2 Add water and spices and let water boil.
3 Add rice and corn, if using. Let boil until all water is gone. You will want the flame on medium. If the water evaporates too quickly, the rice will be hard and undercooked.
4 Put flame on low and cover, stirring at occasionally.
5 Let cook for about 10-15 mins or until tender.
