Red Pasta Sauce
15 Ripe Tomatoes
4 Garlic Cloves
4 Tablespoons Basil, Fresh
1 Teaspoon Pepper
1 Tablespoon Sugar
2 Tablespoons Olive Oil
Score the bottom of each tomato with an “X”
Boil a large pot of water and in batches boil the tomatoes for about a minute.
Place the boiled tomatoes in a bowl of ice water.
Once cool, peal the skins off, quarter and remove seeds. Place in a food processor and process.
Heat olive oil and garlic in a 5 quart pot until fragrant.
Add tomatoes, pepper, sugar and basil stirring often.
Simmer for 1 hour with pot uncovered, 1 1/2 hours with pot covered.
