Red Pasta Sauce


15 ripe tomatoes
4 cloves of garlic
4 tablespoons of basil, fresh
1 teaspoon of pepper
1 tablespoon of sugar
2 tablespoons of olive oil


1 Score the bottom of each tomato with an “X”
2 Boil a large pot of water and in batches boil the tomatoes for about a minute.
3 Place the boiled tomatoes in a bowl of ice water.
4 Once cool, peal the skins off, quarter and remove seeds. Place in a food processor and process.
5 Heat olive oil and garlic in a 5 quart pot until fragrant.
6 Add tomatoes, pepper, sugar and basil stirring often.
7 Simmer for 1 hour with pot uncovered, 1 1/2 hours with pot covered.
