Masitas De Puerco Fritas


2 1/2 pound pork loin
12 cloves of garlic, crushed and lightly chopped
1/4 cup of orange juice
1/4 cup of lime juice
1 cup of olive oil
1/2 teaspoon of salt
1 teaspoon of oregano
1 teaspoon of cumin
1/2 red onion, sliced
2 cups of water


1 Cut pork into 2-inch chunks.
2 Combine orange juice and lime juice, mix thoroughly.
3 Combine garlic, diced onion, orange juice mix, 1/2 olive oil, oregano, cumin, and salt.
4 Mix the marinade and pork together and let sit in the refrigerator overnight or at least 4 hours.
5 Remove pork from marinade.
6 Place in a large pan with water and the remaining 1/2 cup of olive oil.
7 Simmer until all liquid boils away, about 30 minutes.
8 Add sliced red onions and brown pork.
9 Top with Mojo Dressing
