Masas De Puerco Fritas
2 1/2 Pound Pork Loin
12 Garlic Cloves, Crushed and Lightly Chopped
1 Yellow Onion, Diced
1/4 Cup Orange Juice
1/4 Cup Lime Juice
2 1/2 Cups of Olive Oil
1/2 Teaspoon Salt
1 Teaspoon Oregano
1 Teaspoon Cumin
1/2 Red Onion, Sliced
2 Cups Water
Cut pork into 2 inch chunks.
Combine orange juice and lime juice, mix thoroughly.
Combine garlic, diced onion, orange juice mix, 1/2 olive oil, oregano, cumin and salt.
Mix the marinade and pork together and let sit in the refrigerator overnight.
Remove pork from marinade.
Place in large pan with water and 1/2 cup of olive oil.
Simmer until all liquid boils away, about 30 minutes.
Add sliced red onions and brown pork.
Top with Mojo Dressing
