Margherita Pizza

Ingredients
Pizza Dough:
- 1 1/3 cup warm water
- 2 1/4 teaspoon yeast
- 1 tablespoon sugar
- 2 tablespoon olive oil
- 3/4 teaspoon salt
- 3 1/2 cups flour (all-purpose)
Sauce:
- 1 cup crushed San Marzano canned tomatoes
- 1/2 yellow onion, diced
- 1 garlic head, minced
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon of salt
Toppings:
- 7 ounces fresh mozzarella cheese, cut thin slices
- Pepperoni
- 5 – 6 large fresh basil leaves, plus more for garnishing
Instructions
- 1 For dough: Whisk together water, sugar & yeast and wait 5 minutes.
- 2 You water mixture should look bubbly, if not your yeast did not activate. You will need to start over otherwise your dough will not rise properly.
- 3 Add oil, salt and flour and kneed until combined. about 10-15 minutes.
- 4 Lightly oil a large bowl with olive oil and cover the bowl with a wet paper towel. Let rise for 2 hours
- 5 Preheat oven to 550
- 6 For Sauce: heat olive oil in pot and add onions & garlic until fragrant.
- 7 Add rest of your sauce ingredients and simmer until your desired thickness
- 8 Turn dough out and cut into 4 equal pieces
- 9 Line your work surface with cornmeal, place dough onto to prevent sticking. Press out into desired shape, spoon your sauce & top with cheese and toppings of your choice.
- 10 Slide onto your pizza stone and bake for 7 minutes
Tips:
If your fresh mozzarella is a little damp, press extra moisture out with a paper towel.
