Glazed Donuts

Ingredients
Dough
- 1 1/4 cups warm milk
- 2 1/4 teaspoon yeast
- 2 eggs
- 8 tablespoons butter, unsalted
- 1/4 cup + 1 teaspoon sugar
- 1 teaspoon salt
- 4 1/4 cups bread flour
Glaze
- 4 cups powdered sugar
- 1/2 cup milk
- pinch of salt
Instructions
- 1 Combine 1 teaspoon of sugar with the yeast and warm milk and let sit for 5 - 10 minutes.
- 2 Combine the yeast mixture with the eggs, butter, sugar and salt. Add the flour in 1 cup at a time until the dough is not sticky. You may have to add more flour, add 1 tablespoon in at a time. Knead for about 10 minutes.
- 3 Place in a lightly greased bowl and let rise for about 1 hour or until doubled in size.
- 4 On a floured surface pour the dough out and roll out until about 1/2 inch thickness. Using a donut cutter cut out as many as you can leaving the centers as munchkins. Place the donuts and munchkins on a cookie sheet lined with parchment paper cover and let rise for 30 minutes.
- 5 In a deep pan heat about 3 cups of oil until about 375, fry until golden brown flipping donuts and munchkins over cooking both sides. they cook very fast.
- 6 Lay donuts out on a cooling rack or a plate with paper towels to let the excess oil drain off.
- 7 Combine the glaze ingredients together and once the donuts and munchkins are cool dunk them in the glaze and place on a cooling rack.
