Beef Empanadas

Ingredients

  • 4 1/2 pounds of ground beef
  • 1/4 of a green pepper, diced small
  • 1/4 of a red pepper, diced small
  • 3 garlic cloves, minced
  • 1/4 of a onion, diced small
  • 1 can of tomato sauce
  • 2 packets of sazon with achiote
  • 2 packets of sazon without achiote
  • 2 teaspoons of garlic powder
  • 2 teaspoons of onion powder
  • 2 teaspoon of adobo
  • 1 pound of cheese
  • goya empanada dough, 5" discs

Instructions

  1. 1 Brown ground beef until fully cooked, drain and set aside.
  2. 2 Add onion, garlic and peppers to pan on high until translucent.
  3. 3 Add beef back to pan, add tomato sauce and all spices and cook until well combined, let cool.
  4. 4 Place a disc and place some cheese, 1 tablespoon of meat filling and fold in half.
  5. 5 Take a fork and press dough together until closed.
  6. 6 Fry in deep oil until golden brown.

Tips:

You can also freeze them for later before frying. To cook frozen, either fry on low so empanada has time to cook fully inside or take out the night before and let defrost in fridge overnight.
